Based on the video, I was thinking I could put a set of fat bike tires on my road bike, fill them with H2, and take 10 lbs off the weight of my bike.  Cornering may be a little tricky.

Savings of 320gms per wheel? No way. Think about it. You can fill your tire with a 16gms CO2 cartridge. And C02 weighs more then air. Even if helium weighed nothing the max savings is 16gms no where near 320gms. Helium weighs about ¼ of air. So you are savings is only a 12gms over CO2.
